¡Hola a todos! Bienvenidos a Tan Dulce. En el video de hoy, tenemos una receta muy fácil, pero a la vez irresistible.

Hi everyone! Welcome to Tan Dulce. In today’s video we have a very easy recipe that is at the same time irresistible.

 

Buscáte ya algo para anotar esta receta porque estos alfajores de maicena son una delicia.

Get yourself some paper and a pen to take notes, because this alfajores de maicena are delicious.

 

Los ingredientes que vas a necesitar para prepararlos son: 180 gramos de manteca, 180 gramos de azúcar común, tres huevos, una cucharadita de esencia de vainilla, la ralladura de medio limón, 400 gramos de maicena, dos cucharaditas de polvo para hornear y 100 gramos de harina.

The ingredients you will need to prepare them are: 180 grams of butter, 180 grams of common sugar, three eggs, a teaspoon of vanilla essence, the zest of half a lemon, 400 grams of cornstarch, two teaspoons of baking powder and 100 grams of flour.

 

Lo primero que vamos a hacer, es batir la manteca a temperatura ambiente junto con el azúcar hasta que se ponga bien cremoso y tome un color pálido. Para esto yo estoy usando una batidora eléctrica, pero también se pueden hacer a mano sin ningún problema.

The first thing we are going to do is to beat the butter at room temperature together with the sugar until it becomes creamy and pale in color. For this I am using an electric mixer, but you can also do it by hand without any problem.

 

Después, vamos a perfumar con la esencia de vainilla y la ralladura de limón. También agregamos uno de los huevos y batimos hasta integrar. Vamos a agregar el segundo y tercer huevo, también batiendo entre cada uno.

Then, we are going to add aroma with the vanilla essence and the lemon zest. We also add one of the eggs and beat it until well blended. We are going to add the second and third egg, also beating between each one.

 

Una vez listo, vamos a tamizar sobre la preparación la harina, el polvo de hornear y la maicena. Vamos a integrar estos ingredientes secos con la ayuda de una espátula. Cuando esté lista, te debería quedar una masa blanda y apenas pegajosa.

Once ready, sift the flour, baking powder and cornstarch over the preparation. We will integrate these dry ingredients with the help of a spatula. When it is ready, you should be left with a soft and slightly sticky dough.

 

Entonces, la envolvemos en papel film y la llevamos a la heladera por un mínimo de dos horas o hasta que se sienta firme al tacto. Al envolverla, la aplanamos apenas con las manos para que se enfríe más rápido y a su vez sea más fácil de estirar una vez fría.

Then, wrap it in plastic wrap and take it to the refrigerator for a minimum of two hours or until it feels firm to the touch. When wrapping, we flatten it slightly with our hands so that it cools faster and is easier to stretch once it is cold.

 

A mí me gusta envolverla separándola en dos mitades para después trabajarlas por separado y así tener siempre masa fría.

I like to wrap it by separating it into two halves and then work them separately so that I always have cold dough.

 

Antes de empezar a cortar las masitas, vamos a preparar una placa limpia con papel manteca o en su lugar también se pueden enmantecar y enharinar.

Before starting to cut the dough, prepare a clean baking sheet with parchment paper or you can also use butter and flour.

 

Entonces, vamos a estirar la masa fría de unos 6 milímetros de espesor sobre una mesada espolvoreada con harina o con maicena y vamos a cortar unos círculos de tres centímetros de diámetro.

Then, we are going to roll out the cold dough about 6 millimeters thick on a table dusted with flour or cornstarch and we are going to cut circles of three centimeters in diameter.

 

Estas masitas las colocamos sobre la placa ya preparada, dejando un centímetro entre cada una.

We place these cookies on the baking sheet, leaving one centimeter between each one.

 

Con las cantidades de esta receta salen aproximadamente unos 100 alfajorcitos de 3 centímetros. Y de este tamaño son perfectos para complementar con masas secas o masas finas, pero también se pueden hacer más grandes.

 The quantities in this recipe yield approximately 100 alfajorcitos of 3 centimeters. Being this small, they are perfect to serve as Petit Four, but they can also be made larger.

 

Enseguida, llevamos nuestras tapitas de alfajores a un horno precalentado a 180 grados por entre 11 y 13 minutos.

Next, we place our alfajores in a preheated oven at 180 degrees for 11 to 13 minutes.

 

La masa debe estar aún fría al meterla al horno, por lo que, si se ablanda mucho mientras la cortás, te recomiendo refrigerarla por unos cinco o diez minutos más antes de cocinarla.

The dough should still be cold when you put it in the oven, so if it gets too soft while you cut it, I recommend refrigerating it for five or ten more minutes before baking.

 

Estas son las tapitas recién sacadas del horno, deben quedar blanquitas por arriba y doradas en la base.

These are the cookies just out of the oven, they should be white on top and golden on the base.

 

Para rellenar los alfajores vamos a usar 800 gramos de dulce de leche repostero al que vamos a colocar dentro de una manga pastelera con una boquilla grande y lisa. También se puede untar el dulce de leche con un cuchillo, pero con la manga quedan muchísimo más prolijos.

To fill the alfajores we will use 800 grams of dulce de leche, which we will put into a piping bag with a large, smooth nozzle. You can also spread the dulce de leche with a knife, but with the piping bag they are much neater.

 

Además, vamos a usar 70 gramos de coco seco y rallado para el borde de los alfajores. Entonces, vamos a pegar de a dos tapitas con abundante dulce de leche y por último pasamos el borde del alfajor por el coco.

In addition, we are going to use 70 grams of dry and grated coconut for the edge of the alfajores. Then, we are going to sandwich two cookies with plenty of dulce de leche and finally, we are going to roll the edge of each alfajor over the coconut.

Bonus: If you cannot find dulce de leche in your area, just grab a can of condensed milk, put it in a pot with water making sure the can is completely covered and simmer the cans in low heat for 3 hours and… All done! Now you have a very decent dulce de leche for your recipe 🙂
